We're thinking about giving it a whirl this Friday. Any tips for first-timers?

Oh goodness, have fun! My hubby bought it in Europe and had it shipped home. It was fun to try, but we still have 3 virtually full bottles on the shelf, 2 greens and a white. Definitely go the route with the sugar cube, we found directions on line. It gives you a buzz pretty fast, but we didn't see any green fairies. ;-)
I have discovered a few recipes for it as well and now cannot eat cioppino without it. It's an awesome addition when cooking almost any Italian style tomato shrimp combo. Also used it in a cake recipe that ended up quite good, the baking process seemed to tone down the potency of the licorice flavor. I find I definitely prefer it in food.

Oh my, that brings back some memories. We stayed in a castle in France a few years ago, and the chef had some home brewed absinthe that we got to drink. We had it the traditional way, with the sugar, slotted spoon and water routine. The castle supposedly had a ghost, Gaspar, but we didn't see him. No green fairies, either.
And where did you get that?? Do tell! My husband would adore that as a Christmas gift.
absinthe is nasty if you don't cut it with something... I've read Hemingway's thing before and have always wanted to try it, please post your experience. I have some my friend got in England and would love to find a good way to drink it.
Be sure to add a couple of cubes of sugar and LOTS of iced water ~ the taste of absinthe improves significantly with water, which mellows the strong flavor. Say hi to the green fairy for me!
Is that the American stuff of the European kind? I talked to a few bar tenders that said the American kind is way less potent than the European kind because of laws (blah, blah). So don't be surprised if you don't see Fairies...maybe pink elephants instead!
